i slept finally - from 10-ish to 3:30!!!
just made chicken soup from leftover chicken i baked the other day...... it's stewing/steaming so the noodles can get done...
linds is cutting j's hair - which is very curly, so it's hard to cut it and come out with a style....... and his job is requiring that he get it cut......but they're asking him for a TEXAS style....... whatever that means???? any ideas???
we'll see what he looks like in a moment..... it'll probably look sorta Beatle-ish......kinda rock-star-ish..... kinda J-ish and Lindsey-ish

It was great to hear a little about the encounter from Beth and Andyola.
I know that they all got touched this weekend.
Beth - Jeremiah is working at Hays Utility - on their "yard crew" - the guys that repair the yards after the construction crew tears them all up! Full time. He rides to & from work with Papa JC (who's financial manager for the company)... Paul H is now employed there as well in yard crew. I think they are looking for more construction crew, but not for sure. JC says they're always looking for men willing to work hard and don't mind hard work...outdoors, digging, etc... but JC's not in charge of hiring...
blog sure slowed down on Saturday...
plus Jess is puny......

i'm still hacking and lymph nodes around whole neck are extremely swollen and sore......face swollen too...... no fever (but never had much) trying to decide whether or not to attend church meeting... want to see the 'family'... miss our peeps at church.....

wore myself out at HEB after lunch with a 20-somethings group...
now will fight off a nap, so that i might go to bed at 8:30 so i can return to work at 5 a.m. Monday.

i have a roast in the oven, real low, for tomorrow! nights' supper!!! i'm trying to get these meals going before the last minute... the only problem with cooking a roast at night, is that when you wake up in the morning, the smell of it wafting from the kitchen causes nausea a-kin to morning sickness.....
terri bb - i'm considering attending the meeting Tues night at connie's house *at her invite* if i can stay awake that long... what time does it start.....thankfully i won't have to work the next morning...

good night VKG - i saw your huge monkey head...
terri bb - my DAD is the one who taught me how to make roast, and i'm still a-workin' on the technique. he cooks his a very very long time in a very slow oven.....
and yes, my fave meal is my mom and dad's roast, mashed potatoes and gravy - brown gravy from the juicy bits left in the bottom of the pan, the way my Bumma used to make.....she taught my dad... she died in '97....her bday was the 23rd...and she wouldda been 102 years old had she lived!
you just buy a roast, put it in a pan with a lid, put in an oven set on 290 degrees and let it cook forever (8+ hours) oh, i put salt and pepper and onions on the top of mine.....
i used to do the thing it says in cookbooks, where you braise it after dredging in flour, etc. but it seems it never turned out right. this is the way my dad does his......and it's wonderful...
i'm still working on my technique though... and i've figgured out lately that it does better if it's never been frozen.....

don't put any water in the pan.....just makes the thing tough...
and, 90 minutes before serving, peel your potatoes and carrots.....then turn up heat to 375, and put them in the pot, with lid back on tight and cook them an hour or so til tender... DON'T ADD WATER OR ANYTHING ELSE......
then, when tender, take them out, take the roast out to cool slightly on a platter, and then prepare the gravy from what's left in the pan. call me if you get stuck on the gravy one day and i'll help...... :-)
